Preparations:
Preheat oven to 350 degrees. Chop mushrooms, dice onions, mince garlic, shred mozzarella cheese, toss pine nuts in sauté pan until roasted. If using frozen spinach, squeeze all residual water.
INGREDIENTS
1/4 cup pine nuts, toasted/roasted
3 cups of fresh spinach or 300 gm package frozen spinach
1/4 cup of Spanish onions, diced
1 clove garlic, minced
1 cup fresh mushrooms (wild, assorted or button)
1/3 cup or 300 gm soft cream cheese at room temperature
1/3 cup grated Parmesan cheese
1/3 cup grated Mozzarella cheese
Splash of wine, red or white
Juice of 1 lemon
24 slices of Black Forest Turkey or Ham
Salt and pepper to taste
DIRECTIONS:
Roast pine nuts. Set aside. Sauté onions until translucent. Add garlic and mushrooms. Deglaze pan with juice of 1 lemon and splash of wine. Add spinach and sweat lightly. Let stand to cool. Mix with room temperature cream cheese, add Parmesan and Mozzarella cheese. Season with salt and pepper to taste.
Line muffin tins with turkey or ham (optional to use muffin liners). Place 1 1/2 tablespoon of mixture into centre of each turkey slice, lightly pressing down. Bake in a 350 degree oven for 15 minutes or until heated through.
Top with diced red pepper for the festive touch.
