Your Inspiration:
Feel free to add your own ideas into this dish. When you cook it once, it becomes yours, so don’t be afraid to personalize it a bit. Try adding more of an ingredient you like or less of something you don’t like. Try substituting one ingredient for another. Remember the words do not contain the flavour, you have to add your own!
INGREDIENTS:
4 x 6 to 8 oz haddock filets
1 cup of julienne carrot
1 cup of julienne red pepper
1-1/2 cup of julienne snow peas
1 cup julienne onion
Zest and juice of 1 lime
2 teaspoons of olive oil
2 cloves of minced garlic
2 teaspoons of shredded fresh ginger
1 teaspoon soy sauce
Salt and pepper
DIRECTIONS:
Preheat oven to 350 degrees.
Cut carrot, red pepper, snow peas and onion into a julienne. Toss in a bowl with lime zest, olive oil and salt and pepper. Mince garlic and shred fresh ginger.
Fold 4 x 16” by 16” pieces of parchment paper in half and cut out a large heart shape, with the fold being the centre of the heart.
Open one sheet up and then place some of the vegetables along the fold.
Repeat 3 times.
Place piece of haddock on top of the vegetables, season with salt and pepper and sprinkle on the garlic, ginger.
Drizzle soy sauce and a little lime juice.
Fold the other half of the heart over and begin to fold and roll over the edges to create a package.
Twist end to seal.
Put on a baking sheet and bake for 10 to 15 minutes.
Serve with your favorite rice or noodle.
